This holiday season has been so busy, that I had no time to post my planned Christmas menu recipes.... such a shame...! Nevertheless, I am posting the recipes herewith, though a little late for Christmas, but you can certainly use them to create exciting party food to entertain guests, whatever the occasion...!

To treat my friends and family this festive season, I put up a 4 course menu. One key thing....turkey, being the bird of the season, features in each dish...(except the dessert of course). Check it out below'

1st Course
Turkey Suya Skewers with a very simple Lettuce & Tomato Salad

Fried Rice & Jollof Rice served with Oven Grilled Peppered Turkey & Spiced Mixed Vegetables

4th Course
Decadent Cinnamon Sponge served with Chocolate Marbled Ice-cream.


My friends and family were well fed until they were "fed up"....(Idi Amin humour....hehehe)

Turkey Suya Skewers with a simple tomato & lettuce salad

What you need
  • Fresh turkey breast
  • Suya spice
  • Peanut butter
  • Ice berg lettuce
  • Groundnut oil (or use any oil of choice)
  • Cherry tomatoes
  • Salad dressing

What to do
  1. Slice the turkey breast thinly across the grain. 
  2. Carefully place the sliced turkey on the skewers and place on a tray. 
  3. Sprinkle the suya spice over the skewers ensuring all sides are covered. Allow 1-2 table spoons of peanut butter to dissolve in some groundnut oil. 
  4. Then drizzle all over the turkey skewers. Heat some oil in a griddle pan. Then carefully place the turkey skewers on the hot griddle and allow to cook for about 4 minutes on each side. The depends on the thickness of the turkey.
  5. Shred the ice-berg lettuce and slice the cherry tomatoes in two. 
  6. Add a little salad cream. Serve skewers with salad.
