Pancakes with minced Hibiscus petals and Syrup

February 9th is Pancake Day...at least in the UK. So that means we would be having all manner of pancakes that day, something my daughter always looks forward to.

Pancakes have become so versatile to serve as breakfast and even as desserts. There are all sorts of pancake recipes incorporating all sorts of things ranging from fruits and vegetables and also different types of meats and fish, for the savory type.

Well there is room for one more.....

Pancakes with minced Hibiscus petals 

I love zobo, which is known in the western world as hibiscus flower. I love the really addictive sharp taste and the mesmerizing intense deep red colour...with a little added sweetener, there is a myriad of things a creative cook can do with this versatile plant.... oh and have I mentioned that is it super high in antioxidants......its got to anyway, don't you see its colour...!?

Try making some syrup using these flowers, store and use as needed, I tell you it is much better than the regular syrup added to pancakes. Get the recipe for making Zobo Syrup here.

Pancakes with minced Hibiscus petals and Syrup

For this recipe:


What you need
  • Sugar
  • Egg
  • Flour
  • Milk
  • A pinch or two of baking powder
  • Hibiscus flower syrup (Get recipe here)
  • Finely chopped zobo leaves stewed in sugar (Get recipe here)

What to do
  1. Make a pancake batter as usual, or to your preference, Then add some chopped hibiscus petals, this is optional, and mix into the batter. 
  2. Fry your pancakes as usual. 
  3. Pile pancakes onto a plate and sprinkle remaining chopped hibiscus petals. Then drizzle with the syrup. Serve hot.
