Description:
This course provides an overview of the different methods and techniques involved in preparing and cooking Nigerian food.

This course will  help you to discover the different ingredients, spices and condiments used and how they are best used to create exciting tastes and flavours.

You will also get a little insight into how west African cuisine has influenced cuisines in other parts of the world.

Who Should Attend
This course is particularly suitable for those
  • who are new to Nigerian cuisine, and are really keen to learn how to cook it. 
  • who have relationships or associations with Nigerians either through civil or business partnerships and would like to learn Nigerian culinary culture 
  • who were born outside Nigeria but are of Nigerian origin, seeking to learn more about Nigerian culinary culture
  • who have some knowledge of cooking Nigerian dishes but want to improve on cooking them
  • who simply are on a culinary adventure and want to try something new! 

Mode of Delivery
The session promises to be fun, very informative and hands-on. The day begins with snacks and wine and verbal exposition, followed by a hands-on cooking session. Learners are supported individually with instant verbal feedback. At the end of the cooking, learners sit down to enjoy the food they made, with a well earned glass of wine or other preferred drinks.

What do I cook
Learners will

  • Choose and cook a traditional soup recipe. (egusi, stew or efo riro) 
  • Make an accompaniment to serve with the soup. 
  • ​You will also get to cook one rice dish. (Jollof, Fried or Coconut rice). 
  • You will also learn to make one type of salad (with fruits or vegetables), as demonstrated by Funke Koleosho.


What the Course covers
  • A short overview of the history of Nigerian cooking.
  • An insight into the techniques of Nigerian cooking.
  • Introducing The New Nigerian Cuisine
  • Explanation of ingredients and how to find them.
  • Tips and hints on achieving success.
  • Question & Answer session
  • Learners will be supported by tutor and cooking assistant through out

What the day involves
  •  Snacks and wine on arrival. 
  •  All ingredients and materials are provided. 
  •  Classes are a combination of a talk, demo and plenty of hands-on cooking. 
  •  Drinks (wine, juice or water) are supplied at lunch to accompany the meal you have cooked. 
  •  Any food not eaten can be taken home. Takeaway container provided. 
  •  A handout of your recipe is provided. 
  •  We do the washing up. 

What you need to bring
  •  A notebook and writing materials
  •  Carrier bag
  •  You can bring a friend/family member for support (limited spaces, discuss in advance)
  •  Apron

Additional 
Nigerian Spices, condiments, snacks, drinks (eg cocktails/punches, sorrel or  chapman) may be available for purchase
